Shrimp Chow Mein

  • 8 ounces (225g) chow mein noodles
  • 1 pound (450g) large shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 cup snow peas, trimmed
  • 1 cup bean sprouts
  • Salt and black pepper, to taste
  • Chopped green onions, for garnish
  • Toasted sesame seeds, for garnish

Instructions

  1. Cook the Noodles: Cook the chow mein noodles according to the package instructions. Drain and set aside.
  2. Marinate the Shrimp: In a bowl, combine the shrimp with soy sauce, oyster sauce, and hoisin sauce. Toss to coat the shrimp evenly. Set aside to marinate for about 10-15 minutes.
  3. Heat the Oils: In a large skillet or wok, heat the vegetable oil and sesame oil over medium-high heat.
  4. Stir-Fry the Aromatics: Add the minced garlic to the skillet and stir-fry for about 30 seconds until fragrant. Add the sliced onion and bell pepper, and stir-fry for another 2-3 minutes until they start to soften.
  5. Cook the Shrimp: Add the marinated shrimp to the skillet and stir-fry for 2-3 minutes until they turn pink and opaque.
  6. Add the Vegetables: Add the shredded cabbage, shredded carrots, snow peas, and bean sprouts to the skillet. Stir-fry for another 2-3 minutes until the vegetables are crisp-tender.
  7. Season the Chow Mein: Season the chow mein with salt and black pepper to taste. Add the cooked chow mein noodles to the skillet and toss everything together until well combined and heated through.
  8. Garnish and Serve: Garnish the shrimp chow mein with chopped green onions and toasted sesame seeds. Serve hot and enjoy!
