Shrimp Chow Mein

- 8 ounces (225g) chow mein noodles
- 1 pound (450g) large shrimp, peeled and deveined
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 cup shredded cabbage
- 1 cup shredded carrots
- 1 cup snow peas, trimmed
- 1 cup bean sprouts
- Salt and black pepper, to taste
- Chopped green onions, for garnish
- Toasted sesame seeds, for garnish
- Cook the Noodles: Cook the chow mein noodles according to the package instructions. Drain and set aside.
- Marinate the Shrimp: In a bowl, combine the shrimp with soy sauce, oyster sauce, and hoisin sauce. Toss to coat the shrimp evenly. Set aside to marinate for about 10-15 minutes.
- Heat the Oils: In a large skillet or wok, heat the vegetable oil and sesame oil over medium-high heat.
- Stir-Fry the Aromatics: Add the minced garlic to the skillet and stir-fry for about 30 seconds until fragrant. Add the sliced onion and bell pepper, and stir-fry for another 2-3 minutes until they start to soften.
- Cook the Shrimp: Add the marinated shrimp to the skillet and stir-fry for 2-3 minutes until they turn pink and opaque.
- Add the Vegetables: Add the shredded cabbage, shredded carrots, snow peas, and bean sprouts to the skillet. Stir-fry for another 2-3 minutes until the vegetables are crisp-tender.
- Season the Chow Mein: Season the chow mein with salt and black pepper to taste. Add the cooked chow mein noodles to the skillet and toss everything together until well combined and heated through.
- Garnish and Serve: Garnish the shrimp chow mein with chopped green onions and toasted sesame seeds. Serve hot and enjoy!
